Palestinian Fattoush Recipe

Fattoush is a salad made from toasted or fried pieces of khubz (Arabic flat bread) combined with mixed greens and other vegetables, such as radishes, cucumber and tomatoes.


Ingredients:

  • 1 head of romaine lettuce (chopped)

  • 2 ripe tomatoes (diced)

  • 1 cucumber (diced)

  • 1 small red onion (thinly sliced)

  • Fresh parsley & mint (chopped)

  • 1 green bell pepper (optional, chopped)

  • 2 pieces of Arabic pita bread (toasted or fried)

  • Juice of 1 lemon

  • 1 clove garlic (minced)

  • 3 tbsp olive oil

  • Salt to taste

  • Sumac (1-2 tsp)


Optional: 1 tsp pomegranate molasses for extra tang!


Instructions:

1. Toast or fry the pita bread until crispy. Break into

bite-sized pieces.


2. In a large bowl, mix: lettuce, tomatoes, cucumber,

onion, green pepper, parsley, and mint.


3. In a small bowl, whisk together:

  • Olive oil

  • Lemon juice

  • Garlic

  • Salt

  • Sumac (adds the signature tangy flavor!)

  • Optional: pomegranate molasses


4. Pour the dressing over the salad and mix well.


5. Add the crispy pita pieces right before serving so

they stay crunchy!
